As wine critic, Joan Nebot, has remarked in his recent articles, our sparkling wine is the only champagne of the Penedès.
In contrast to many sparkling wines produced in the DO Cava (an artificial region which can include all of the Catalan wine regions and small islands in Requena, Valencia, Rioja, Navarra or Extremadura, our sparkling wine originates in a single and specific wine region, Penedès.
This sparkling wine has gone through a second fermentation in the bottle. A blend of Xarello and Chardonnay it is produced with mature grapes to achieve a higher level of alcohol and consequently more body and structure.
