Winemaking: It is a unique fortified wine which has been produced using the Merlot variety (his favourite), following fortified liqueur wine methodology that partially ferments the must and then, tops it off with a grape alcohol from the same harvest. In this way, an excellently stable wine is achieved that is rich in sugars and with a high alcohol percentage.
Over a 15-year period, small quantities in 225 litre casks have been made each year, following the solera process which characterises the great Jerez fortified wines. Hence, the wine has a solera of 15 years.
Taste Note:Dark amber coloured wine, with reddish tones. On the nose, it is an aromatic festival, for its abundance, cleanness and complexity. There are traces of the crianza in the cask, rancio wine notes which are combined with extremely ripe forest fruits, blackberries and also dried figs, dried peaches and toasted hazelnuts. On the palate, it is moderately dense and not too sweet –in any case, not at all cloying, with a notable presence of the 19 % alcohol which makes it befitting of the most delicate Jerez brandies. It has refreshing traces of acidity and a long aftertaste, almost eternal, in which the nuances, toasted and of fruit, mellow until a sweet death. (Tasting note written by Joan Nebot, wine critic).
Food and wine combination:After-dinner wine par excellence. Recommended for marrying with foie gras-based appetizers. A good companion for some strong blue cheeses. Ideal for pouring over a selection of fresh fruits and it is also a perfect combination with almond càtanies, truffles and nuts.
