Winemaking: As soon as the harvest reaches the cellar the grape is unloaded into the hopper which takes it to the destemmer. This is important to avoid herbaceous notes in the wine. Once the stems and leaves have been separated the grape proceeds to stainless steel tanks. The must macerates with the skins as it ferments at a temperature of 28ºC. A maceration of 15 days allows for extraction of a good dose of tannic structure and antociants.
Ageing: A light ageing in wood of around 3 months in French oak barrels is followed by a long rest and rounding off in the bottle. This perfect combination produces an expressive balance between the varietal notes and those of reduction.
