This wine is a blend of Xarello and Chardonnay. As soon as the grape bunches begin to change colour, half are cut away to reduce production. This is how we achieved the level of tannic and aromatic concentration of this wine.
The grapes are pressed immediately after destemming. Alcoholic fermentation begins in stainless steel tanks and concludes in barrels where the wine develops slowly at a temperature of 14ºC. A later malolactic fermentation gives it a more agreeable level of acidity on the palate.
