Antistiana was an ancient Roman town and mansion near the Via Augusta, on the road from Arles to Tarragona (Tarraco) and to Cartagena (Cartago), of uncertain location; perhaps in the triangle between Vilafranca del Penedès, Olèrdola and La Ràpita, near Santa Margarida I els Monjos. Possibly the name was taken by Cayo Antistio, one of the Roman generals who took part in the Cantabrian war.

Characteristics

Vinification: Once the grapes are destemmed and cooled to 8 °C, they are placed in stainless steel tanks at low temperature (to prevent fermentation) for 5 days, thus obtaining good extraction of flavour compounds, colour and tannins. This pre-fermentation stage is followed by alcoholic fermentation at a controlled temperature of 25 °C over a period of about 20 days. After devatting has been carried out and the pulp has been pressed, it is placed in underground tanks to avoid a drop in temperature and so as not to hinder malolactic fermentation.

Aging: In December 2015, it was placed in second-year barrels of 225 litres, of French origin, fine grain and lightly toasted. At the beginning of April 2016, after 12 months of oxidative aging, the wine was removed from the barrels.

Food pairing and service

Roasted, stewed or braised red meats. Mature cheeses. Risottos with vegetables, mushrooms and even grilled fish. Fun combination with chocolate.

Possibly, Merlot has never been treated as well in Penedès as it has been at the hands of Mas Comtal, and as a reflection of this passion, wines like Antistiana Merlot emerge. After making us wait, creating even more anticipation, it shows us the strength and elegance combined of this variety. A French “starlet” dressed in a ‘barretina’ and ‘espardenyes’, offering us a precise and powerful vision of its personality, balsamic aromas and spices, ripe cherries, and a meaty texture, breezes of aging and all the freedom in the world to present itself to the public without masks or makeup.
