Framed in our most experimental line, with this new wine made with Incrocio Manzoni we want to recover the elaboration of ancestral sparkling wines. With this ancient method, unlike champenoise, carbonic is the result of a single fermentation. The must is bottled halfway through fermentation, so that the bubbles found in the glass are the result of its culmination.
It is a tribute to the aromas and sensations of other times.

Food pairing and service

Its uniqueness lies not only in the ancestral method used in its production but also in the variety, a rarity that is not commonly found in our vineyard. A floral expression with clean stone fruit and plenty of energy. On the palate, it is vibrant, with many primary nuances and a wild, playful, and highly intriguing profile.
